Grill Method
Preheat the grill to 450°F (232°C), then reduce to medium heat before placing the steak. Cook the first side, flip once, and finish until the internal temperature reaches your target range. Times scale with thickness from 1/2 inch up to 2 1/4 inch cuts.
Pan Sear and Oven Method
Sear the steak in a hot oven-safe pan for 2 to 3 minutes on the first side, flip, then finish in a 400°F (205°C) oven. Oven time increases with thickness. Use a meat thermometer for the most reliable results.
Target Internal Temperatures
Rare steaks finish around 120-125°F. Medium rare is 130-140°F, medium is 140-150°F, medium well is 150-160°F, and well done reaches 160°F or higher. Rest the steak a few minutes before slicing so juices redistribute.
