Target CO₂ by Style
Different beer styles need different carbonation. Stouts are often around 2.0 volumes of CO₂, ales and IPAs around 2.4, lagers around 2.6, and wheat beers up to about 2.8.
Residual CO₂ at Fermentation Temperature
Beer retains CO₂ from fermentation depending on temperature. The calculator estimates residual CO₂ (IC) in volumes using:
$$IC = 3.0378 - 0.050062 \times T + 0.00026555 \times T^2$$
where \(T\) is fermentation temperature in °F.
Priming Sugar Formula
Grams of priming sugar (PS) to reach your target final carbonation (FC):
$$PS = \frac{15.195 \times BV \times (FC - IC)}{S}$$
BV is beer volume in gallons. S is the sugar factor: table sugar 1.00, corn sugar 0.91, DME 0.68, honey 0.78.
Frequently Asked Questions
How much priming sugar for 5 gallons of IPA?
At 70°F fermentation and table sugar, about 119 grams (4.2 oz) for 2.4 volumes of CO₂.
Why does fermentation temperature matter?
Warmer fermentation leaves more residual CO₂ in the beer, so you need less priming sugar to hit the same final carbonation.
Corn sugar vs table sugar for priming?
Both work. Corn sugar has a slightly lower sugar factor (0.91), so you need a bit more by weight than table sugar for the same carbonation.
Can I use DME to prime?
Yes. DME has a lower sugar factor (0.68), so you need more DME than table sugar to carbonate the same batch.
