How Egg Boiling Time Works

Williams Heat-Diffusion Model

This calculator uses a simplified version of the Williams egg-cooking model:

where $m$ is egg mass in grams, $T_{\text{egg}}$ is the starting egg temperature, $T_{\text{water}}$ is boiling point, and $T$ is the target temperature at the white-yolk boundary.

Doneness Targets

Soft eggs target about 65°C, medium about 70°C, and hard eggs about 75°C. Cool eggs in cold water right after cooking to stop carryover heat from over-setting the yolk.

Frequently Asked Questions

Why does altitude change boiling time?

Air pressure drops at higher elevation, so water boils at a lower temperature. Heat transfers more slowly, so eggs need longer in the water.

Should eggs be room temperature or cold?

Cold eggs from the refrigerator need more time than room-temperature eggs because the interior starts farther from the target temperature.

How do I avoid a green ring around the yolk?

Do not overcook. Stop at the hard-boiled target and cool the eggs quickly in cold water to limit iron-sulfur reactions at the white-yolk edge.

Does egg size matter?

Yes. Larger eggs have more mass and need longer cooking time. The model scales with $m^{2/3}$, which matches how heat penetrates the egg.
