Why Scale Baking Recipes by Pan Size?
Baking is a science of precise ratios. When you want to bake a cake, bar, or bread but don't have the exact pan size specified in a recipe, you cannot simply guess the quantities. Doing so could result in dry, overbaked goods or batter overflowing in your oven. To keep the depth of the batter consistent and ensure even baking, you must adjust your recipe ingredients based on the surface area or volume of your pans.
Understanding the Mathematical Formulas
To scale a recipe, we first calculate the conversion multiplier (the scaling factor) by comparing the sizes of the original pan and the target pan.
1. Calculating Surface Area
If both pans have the same depth, we compare their top surface areas:
- Round Pan: The area is calculated using the radius $r$ (which is half the diameter $d$): $$A = \pi r^2 = \pi \left(\frac{d}{2}\right)^2$$
- Square Pan: The area is calculated using side length $s$: $$A = s^2$$
- Rectangular Pan: The area is the product of its length $l$ and width $w$: $$A = l \times w$$
2. Calculating Volume
If the pans have different depths, or if you are using specialty pans like Bundt or tube pans where volume is specified directly, we calculate the volumes to find the ratio.
- For standard shapes, the volume $V$ is the surface area $A$ multiplied by the depth $h$: $$V = A \times h$$
- For Bundt and specialty pans, volume is measured in cups or milliliters.
3. The Conversion Multiplier
Once the area or volume of both pans is known, we find the multiplier $M$: $$M = \frac{\text{New Pan Area/Volume}}{\text{Original Pan Area/Volume}}$$ Simply multiply every ingredient quantity in your recipe by this multiplier $M$ to get the new ingredient quantities.

How to Adjust Baking Time
While ingredient quantities adjust proportionally with this tool, you must also be mindful of the baking time:
- If your new pan makes the batter thicker/deeper than the original recipe, the cake will require a longer baking time at a slightly lower temperature to ensure the middle cooks without burning the edges.
- If your new pan makes the batter thinner/shallower, it will cook much faster. Watch the oven closely and check with a toothpick early.

Always measure the inside dimensions of the pan from edge to edge. Do not include the thickness of the metal rim, as it does not hold batter and will lead to an inaccurate area calculation.
What happens to baking temperature when converting?
If the batter is deeper in the new pan, lower the temperature by 25 degrees Fahrenheit (approx. 15 degrees Celsius) and bake for longer. If the batter is shallower, keep the temperature the same or slightly higher, but check for doneness much earlier.
How much should I fill a baking pan?
As a general rule, never fill any baking pan more than two-thirds full of batter. This leaves enough room for the cake to rise without overflowing into your oven.
